1/3	c	Relish, sweet pickle
1/4	c	Onion, green; sliced
1/4	c	Mayonnaise
2	tb	Vinegar, cider
1	tb	Sugar
1/4	ts	Salt
1/8	ts	Pepper
2	c	Apples; diced, peeled
2	c	Beets, pickled; diced
		Lettuce leaves; optional
		Eggs; hard-cooked, chopped optional

In a bowl, combine the first seven ingredients. Gently fold in apples and beets. If desired, serve on a lettuce-lined plate and top with chopped egg.
